This is hands down the best cut of pork available. I was thrilled to learn that D’Artagnan offers Berkshire pork belly online for home cooks, and that I can get access to the same quality of meat used by top restaurants in Chicago.
Ordering a skin-on, bone-in pork-belly is the way to go. I have been able to get several impressive meals out of one pork belly. It is easy to remove the spareribs for one meal, and cut off a hunk to make homemade bacon. The remaining belly makes a most impressive dish – an Italian Porchetta Roast! Cook it low and slow and once all the fat renders out you are left with the most juicy pork roast imaginable and crispy skin! It is basically an all-meat Bacon Roast.
I buy it when it goes on sale. It arrives the next day, I cut it up it for several meals, and freeze the cuts. It couldn’t be easier and more economical. Like all the others that have reviewed and tried Berkshire pork, I am hooked.
