Authentic Balsamic vinegar comes from Modena and Reggio Emilia in Italy. A certified bottle from top producer Cavalli is rated by three categories - Gold, Silver and Red labels depending on the age. I use the Red and Silver labels on steaks, dipping bread and on my homemade duck prosciutto. The best balsamic, the 75-year old Gold Label, is wonderful on ice cream and strawberries. We brought this bottle back direct from Modena, and have not yet opened it. It is pricey so we are waiting for the perfect dinner party to splurge.
